1 Packet Makes Approx. 8 pancakes
Things you Need:
- 2 large free range eggs (1 large mashed banana + 1 tbs chia seeds for vegan version)
- 150ml milk of your choice
- 1 tbs coconut oil
Method
In a large bowl, whisk together eggs (or vegan alternatives), milk and coconut oil until light and foamy.
Place dry pancake mix into a bowl then add the wet mixture and combine.
Preheat a large non stick fry pan on a low heat then add a small amount of coconut oil.
Spoon mixture into the pan at desired size and leave for 2 to 3 minutes. Flip and cook for a further minute then remove from pan.
Top with your favourite healthy toppings and serve.
